This morning’s #GardenHaul brings us Rosa Bianca Eggplants and Okras! I had an eggplant plant earlier in the year, so I kept the seeds from the fruit of that plant, and now I have any more eggplants that I am excited to try in some West African recipes. 🤤

As for the okras, they are also LATE LATE to the game. I had to have a chat with the plants because September came and went, and they were looking back in my face like “what it do?” We came to an agreement, and here we are with some okras to throw in some rice and/or stews. 

Both the eggplants and okras have numerous health benefits! 

Rosa Bianca Eggplant

I honestly didn’t know the many different varieties of eggplants that exist. I remember when my first eggplant plant put out flowers, and then the babies looked like baby eggplants. Turns out that is exactly what they were. This latest plant from another mother turned out to be a Rosa Bianca eggplant. The name is so cute to me. Be that as it may, here are some benefits of this particular type of eggplant. Rosy-lavender with white shading, the fruits of this beautiful Italian heirloom are large, round and 5-6″ long. With a mild, non-bitter flavor, the fruits robust shape is ideal for slicing, baking or roasting. This particular variety provides B vitamins, potassium, copper, magnesium, phosphorus, niacin, and folic acid. Also a good source of antioxidants and dietary fiber.

Okra

When we say food is medicine, we aren’t just blowing smoke at you. Not convinced? Look at the many ways consuming okra can help your body! Okra is rich in vitamins A and C, as well as antioxidants that help reduce the risk of serious health conditions like cancer, diabetes, stroke, and heart disease. Okra is also a good source of: Magnesium. Folate, Vitamin A, Vitamin C, Vitamin K, and Vitamin B6. Not only that, Okra has been shown to help the following conditions:

  • Fight Cancer
  • Control Blood sugar
  • Prenatal support
  • lowers heart disease risk
